High Alta-tude Haskap

This week, we had the amazing experience of dining at one of our partner restaurants, Alta Bistro in Whistler and we are here to tell you that they deserve all the accolades you've heard and more.

 

Chef Nick Cassettari and his team consistently produce delicious, satisfying, world-class dishes that utilize local ingredients in season with a deep nod to sustainability. Northern Light Orchards has been proud to supply its haskap berries to this Whistler must-try restaurant and we are delighted to experience haskap as transformed in the hands of a culinary master.  

 

The Dish: Dark Chocolate Ganache with Haskap Berry Sorbet

 

The Elements:  A velvety smooth quenelle of Haskap berry sorbet sits on a bed of crushed pistachio praline, offering a balanced tart taste counterpoint to the silky chocolate ganache swirl in the middle of the plate.   Beautiful micro bites of dessert wine-infused haskap berries topped with freeze-dried raspberries and what we can only describe as crunchy cookie crust nibblets lend texture, while lemon balm and lavender cream  dots round off this fabulous dessert plate.  

 

The Verdict:  Mmmmm... A winner!  Best way to finish an unforgettable meal.
